  • 4 chicken leg quarters
  • 2 tablespoons of butter
  • 1 tablespoon of ghee
  • 1/2 teaspoon of sea salt
  • 1/2 teaspoon of ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons smoked paprika

We get our chicken from Miller’s Bio Farm.

They do great raw dairy products.

And they also have great meat products too.

The above spices are all optional.

Feel free to adjust them to meet your carnivore diet needs.

Step-By-Step Instructions

Step One: Preheat Your Oven

Set your oven to 375 °F (190.6 °C)

This temperature ensures that the chicken doesn’t dry out while cooking.

 

Step Two: Pat Dry And Season Chicken

Place your chicken leg quarters on a chopping board and pat them dry with paper towels.

Combine the sea salt, ground black pepper, onion powder, garlic powder and smoked paprika in a small bowl.

Sprinkle the seasoning mix evenly all over the chicken.

 

Step Three: Brown Your Chicken Leg Quarters

Preheat a cast iron pan on medium heat.

Add a tablespoon of ghee to the pan. Not only is ghee healthy, but it also has a high smoke point.

Place your chicken in the pan, skin side down and sear it on both sides until golden brown.

This typically takes about two minutes per side.

You can brown your chicken in any pan that you like.

But if you do use a cast iron pan, you’ll be able to cook your chicken in the oven, using the same pan.

Step Four: Add Chicken Feet Bone Broth

Add one cup of chicken feet bone broth to your pan.

I always have premade batches of this in the fridge and freezer.

If you don’t have that, just use a cup of regular chicken stock.

Either option works well.

 

Step Five: Cook For Forty Minutes

Place your chicken leg quarters in the oven.

Cook them for forty minutes.

Here’s a bonus tip. If you want the skin extra crispy, you can broil them for 2-3 minutes extra at the end.

I don’t normally do that, because I can’t wait to eat them.

Put them on a plate to rest for 5 minutes.

This gives the juices time to go back into the meat.

As I always say, don’t skip this step.

I know it’s tempting to eat them immediately.

However, you always want to allow any protein time to rest.

On your stove, bring the juices in your pan to a boil on a high heat.

Once the juices are boiling, lower the heat to medium and add one or two tablespoons of butter.

Whisk the butter and juices together continuously for five minutes.

This will reduce the amount of juices and emulsify them with your butter.

The juices will slightly thicken.

And you’ll have a tasty gravy to pour over your chicken, that is carnivore diet friendly.
