This slow-cooked chuck roast recipe is ridiculously easy to make.

And it yields the most tender meat you’ve ever tasted.

Below is the list of ingredients my husband uses to make it.

Ingredients

  • One chuck roast (adjust cooking time based on weight)
  • Organic yellow mustard (an optional binder)
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1/2 tbsp of onion powder
  • 1/2 tbsp of garlic powder
  • 1/4 a teaspoon of cumin
  • 1/4 teaspoon of chili powder
  • 2 tbsp of smoked paprika

Step One: Preheat Your oven

Set your oven to 300°F (148°C).

This low temperature ensures slow, even cooking.

Step Two: Use Yellow Mustard As A Binder

Cover your chuck roast with yellow mustard all over.

It acts as a binder for your dry seasoning rub to stick to.

This is an optional step, depending on your level of strictness with the carnivore diet.

Step Three: Season The Meat

Take your dry rub and season your chuck roast all over.

We like to use butter from Miller’s Bio Farm.

The reason my husband uses cast iron is because he uses the same pan to cook the chuck roast in the oven.

If you don’t have a cast iron pan, you can use any oven safe pan, or dish that you have on hand.

 

Step Five: Wrap In Parchment Paper

Take a piece of parchment paper and put it on a chopping board.

Cut up some pieces of butter and put them on the parchment paper.

Place your seared chuck roast on top of the parchment paper and add more butter, plus any of your leftover dry rub on top of the chuck roast.

Now take another piece of parchment paper and tightly wrap up your chuck roast like a parcel.

Transfer the wrapped chuck roast into your cast iron pan and tightly place foil over the top of your pan.

This helps to lock in the heat and moisture as your chuck roast cook.

 

Step Six: Cook Low And Slow

Cook your roast for one hour per pound.

For a 3lb roast, that’s three hours.

Do not open your oven door, or unwrap the chuck roast during cooking.

This ensures that the meat stays moist.

 

Step Seven: Rest Before Serving

Once your chuck roast is cooked, keep the roast wrapped in butcher paper and let it rest for 30 minutes.

This helps to lock in the juices before slicing.

I know it’s tempting, but don’t skip this step.

It will be way juicier if you let the meat rest.
